5 minute Raspberry Mugfins!!
Oh buddy are these good!! And so easy!!!
I made these for my kids after school snack and they reacted as if I had just made them warm baked chocolate chip cookies…ok well maybe not quite like that…but they were thrilled and ate them up!
1 ripe banana
1/2 cup rolled oats
1 egg or flax egg
A dash of salt and cinnamon
2 tbs of flour (optional)- I used spelt
Put all of the ingredients in a blender and blitz until smooth.
Add a handful of raspberries (I used frozen) and pour the batter into a lightly greased ramekin or mug.
Microwave for 2 minutes.
