I just harvested my first “batch” of rhubarb and I couldn’t believe how nostalgic my first bite was – it took me straight back to my childhood!I thought I would try to create that same experience for my kids by giving them a stalk of rhubarb with a little cup of sugar. They were instantly skeptical when they saw me offering them the sugar but figured they’d give the rhubarb a shot. With the first bite they wailing and scraping their tongues with their fingers. I guess they didn’t like it haha – so much for the nostalgia. Needless to say they weren’t big fans of these muffins but I absolutely loved them!!!

 

 

 

1 1/2 cups whole wheat flour

1 1/2 cups quick rolled oats

1 cup applesauce

1/2 cup dried coconut

2 tablespoons ground flaxseed

2 tablespoons chia seeds

1 tablespoon apple cider vinegar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon almond extract

1 teaspoon cinnamon

3/4 cup soy milk

3/4 sweetener (I did half honey and half raw sugar)

2 cups chopped rhubarb

Combine everything except the rhubarb into a large mixing bowl and stir until it’s been thoroughly mixed. Stir in the rhubarb. Scoop into a muffin tin and bake at 350 for 18-20 minutes. Allow to cool completely so that the centers set up. This recipe makes 12 muffins.
