Almost Raw PEANUT BUTTER MAPLE BARS
(the ingredients might surprise you)
We don’t do a lot of dairy around here (it’s kind of sad when your 18-year-old asks for cow’s milk for his birthday breakfast!) – but that doesn’t mean we are short on calcium. “Beans and Greens” are great sources. (Remember that cow’s get calcium from the plants that they eat!). Another incredible source of calcium is sesame seeds! So why not make a treat loaded with sesame seeds!These seeds have a bit of an earthy taste but I love them! 2 full cups go into this decadent little treat.
2 cups of raw sesame seeds (soaked overnight or for a few hours)
1/2 cup raw honey or pure maple syrup
1/2 cup unsweetened coconut flakes
3 tbs coconut oil (melted)
3 tbs peanut butter powder
Combine all of the ingredients into a high-powered blender.
You can decide how smooth or chunky you want the base to be.
Spread the mixture into an 8-inch square pan that is lined with wax paper. Freeze for an hour.
For the chocolate mix:
1/4 coconut oil, melted
1/4 raw cacao
1/4 maple syrup or brown rice syrup
Mix together and pour over the frozen base. Allow the chocolate to set, cut the squares and store the leftovers in the freezer.
