
Banana Chocolate Chip Muffin-Cookies
How about some banana chocolate chip muffin-cookies for your weekend!! Not quite a muffin, not quite a cookie. But delicious nonetheless!
2 1/2 cups whole wheat pastry flour
3 small ripe bananas, mashed
1/2 cup chopped dates, optional
1/2 sweetener (I used Lakanto Erythritol)
1 tbs apple cider vinegar
1 tbs olive oil
1 cup almond or soy milk
1 tsp vanilla extract 1/2 tsp baking powder
Pinch of salt
3 tbs mini semi-sweet chocolate chips
Preheat the oven to 375 degrees F.
Lightly mist a muffin pan with spray.Combine the flour, baking powder, and salt in a small bowl.Combine the bananas, soymilk, sweetener, vinegar, and vanilla extract in a large bowl and mix thoroughly.
Add the flour mixture and stir until just combined. Stir in the dates.
Spoon the batter into the prepared muffin cups, filling them about three-quarters full.
Bake for about 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
