The beet chips were a success! Although sad to see how small they shrunk down. I steamed the beets (10 minutes on high pressure in the pressure cooker) then thinly sliced them. I then sprayed them with a little olive oil and lightly salty them. I stuck them in the dehydrator until crispy. If you don’t have a dehydrator you could easily bake them on the lowest setting in your oven.
