There’s a store here (Costco) that sells delicious Cashew Clusters. I’ve always thought they’d be pretty easy to make at home….and sure enough they were!!! I’m heading on a Pioneer Trek in Wyoming tomorrow and these will make a great snack on the trail. 1/2 cup cashews1/2 cup sliced almonds1/2 cup rolled oats1/2 cup sunflower seed (I used all raw nuts)3 tbs honey3 tbs brown rice syrupIn a medium saucepan combine the honey and the brown rice syrup. Bring it to a boil and reduce heat to a simmer. Honey reaches the “hard sugar” stage around 300 degrees so allow it to simmer for about 5 minutes (stirring frequently). Simply pour this over the nut mixture and when it is thoroughly combined press it all into an 8×8 pan lined with wax paper. Once it is completely cooled (I threw it right into the fridge) simply break it into pieces.
