Celebration Waffles with Nice Cream and Caramel
Easter Sunday celebrations included these stacked Whole-Grain Waffles with Pistachio Nice-Cream, Salted Caramel and fresh fruit. Hard to believe this deliciousness was gluten-free, dairy-free and sugar free!!!!Search waffles on the blog for the recipe. It’s definitely worth making a trip to the store to stock up on some of the “funky” ingredients (like millet).
For the Pistachio Nice-Cream simply put 3 frozen bananas in a blender along with 2 tbs of shelled pistachio nuts. Using just a little bit of Almond Milk to help the blender, pulse until smooth. For the Salted Caramel, blend 1/2 cup of softened dates with 1/4 cup of water and a pinch of sea salt. (To soften dates, pour boiling water over them and let them sit for 10 minutes).
