The farmers markets are filled with beautiful beets right now! Here is a recipe that basically consists of beets and veggies marinated in a French dressing (try and find one that isn’t loaded with sugar)1-2 beets, steamed, cooled and cut **1 cup chopped purple cabbage1 cup chopped green cabbage1 large shredded carrot1 cup green peas (the best when garden fresh)Mix all of the veggies in a bottle and top with French dressing. Let sit for about an hour. This salad tastes great as leftovers too. *I use my pressure cooker to cook the beets. 8 minutes on high pressure. I then store them in the fridge until I’m ready to use them
