A Vibrant Life | Flatbread

Oh boy was this easy and delicious!! The flatbread is made with 100% whole wheat flour and I was thrilled to see my kids devour it. The recipe makes a large round of dough that you can cut and roll out it large or small flatbreads. It made enough for each of us (6) to have our own.  I used coconut milk because I thought the added fat would make for good flavor (which it did) but any milk would work.

3 cups whole wheat flour

3/4 cup coconut milk

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tbs honey or sugar

1 tbs vinegar

3 tbs olive oil


Mix all of the ingredients together and either use a machine or knead by hand for a few minutes. If you have time, let the dough sit (covered) for about an hour – this makes it easier to work with and roll out. Heat a griddle and cook the flatbread on each side for about 3 minutes. I topped them with pesto, fresh basil, arugula, tomatoes, feta cheese and balsamic glaze (which I thought was key). I also added toasted walnuts that I forgot until after I took the picture
