Porcini Pasta with Garlicy Mushrooms and Pesto
The best part of this deliciousness is that it took 20 minutes from start to finish (since I had the pesto sauce already made up in the freezer). I found this amazing pasta at a specialty store, but truthfully any pasta will work here – just cook it according to package directions.
2 tbs olive oil or butter
1 lb mushrooms, quartered
3 cloves of garlic, minced
2 cups spinach
1/4 cup pesto sauce
While the pasta is cooking prepare the topping. In a very large pan heat the oil over medium heat. Add the mushrooms and cook for 8-10 minutes. Add the garlic and spinach. Cook for about 3 more minutes until the spinach is wilted. Pour this directly onto the hot past along with 1/4 pesto sauce (search World’s Best Pest and follow the directions for the sauce on the blog)
