Cinnamon Protein Balls

Are you ever looking for quick, healthy snacks that you can grab on the go?

These little protein balls are perfect for just that.  I will often eat one or two of these before a workout if I am feeling hungry and they are also great for an after workout snack.

I have a teenage son who has coaches constantly telling him that he needs more protein (which is another post altogether – let’s just say that we don’t need nearly as much protein as we are being told these days).  But these protein balls are plant-based and perfect for a growing teenager (or child for that matter).

These are also great to curb your sweet tooth.  The dates give them a wonderful flavor and the little drizzle of chocolate adds just the right about of indulgence!

 

1 cup of dates (soaked in water for 30 minutes to soften, then drained)

2 1/2 cups of nuts and seeds – any combination you like (I used almonds, raw cashews, sunflower seeds, sesame seeds, walnuts, hemp seed and flax seed. Just use whatever you have)

1-2 scoops of your favorite Vanilla Protein powder

1 Tbs cinnamon

1 tsp vanilla extract

A pinch if salt

 

Put everything into a large food processor and pulse until a “batter” is formed. Using your hands roll into little balls. You can add a little honey or stevia if you want them sweeter. You could also add a little melted coconut oil to make them creamier. If you like you can melt a little chocolate and drizzle on top. These are best stored in the fridge or freezer.
