Quinoa Sweet Potato Soup
Oh how I love this soup!! It’s magnificent and truthfully one of the healthiest soups you can make (but don’t worry it doesn’t taste like those “sure-it’s-healthy-but-it-tastes-like-dirt” kind of dishes)!! I love sweet potatoes (and regular potatoes would work), I love beans and I love quinoa (ok yes I do love most food – the good stuff and the bad stuff). But this is one you should honestly try!!
2 tbsp olive oil
3 garlic cloves, minced
1 sweet onion, diced
3 small or 2 large sweet potatoes, peeled and chopped to 1/2″ pieces
1 tsp ground cumin
1 tsp chili powder
8 cups broth
1 (15-oz) can black beans, rinsed and drained)
1 1/2 cups cooked quinoa
salt & pepper, to taste
1/4 tsp red pepper flakes
4 large kale leaves, stems removed and thinly chopped, optional
Heat oil in a large pot and add the chopped onion. Saute for a 5 minutes over medium heat. Season with salt and pepper and add in the next 6 ingredients. Bring the broth to a boil. Reduce heat and simmer for 12-15 or until the sweet potatoes are soft. Add the cooked quinoa, black beans, red pepper flakes and chopped kale. Stir well and allow to simmer for 3-4 minutes or until the kale has turned a vibrant green. Remove from heat and serve warm. This is great topped with cilantro, avocado, green onions, or tortilla chips.
