Raw Cheesecake Squares

Crust:

1 cup raw almonds

1 cup pitted dates

1 tsp vanilla extract

1/2 tsp salt

 

Cheesecake layer:

1 1/2 cups raw cashews

1/3 cup maple syrup

1 tbs fresh lemon juice

1 tsp lemon zest

1 tsp vanilla extract

 

Top Layer:

1 cup raspberries

2 tbs maple syrup

 

Directions:Soak the cashews in water for about an hour and then drain off the water.

Line a bread pan with plastic wrap or parchment paper and set aside.

Place the almond in a food processor and pulse until thoroughly ground. Add the dates, vanilla, and salt and pulse until the mixture is combined.Press this mixture evenly onto the bottom of the bread pan and place it in the freezer.

Place the cheesecake ingredients in a high powered blender or food processor and pulse until very smooth. Pour the cheesecake mixture over the crust in the bread pan and spread it evenly. For the topping, simply combine the raspberries with the maple syrup and slightly mash the raspberries as you stir.

Spread topping ingredients evenly over the cheesecake layer.

Freeze for 1 hour before serving.Keep leftovers covered in the freezer.
