Super CLEAN Shepherds Pie
2 tbs olive oil
2 large carrots, sliced
2 cups broccoli
1 cup green peas
1 cup corn
12 large mushrooms, sliced
Sauté the oil and onions over medium heat for 5 minutes. Add the mushrooms, garlic, peas and corn. Cook for 5 more minutes, stirring frequently.
In a separate pot, steam the carrots and broccoli. When all the veggies are cooked, spread them out in a large casserole dish.
Meanwhile heat 2 cups of broth with 2-3 tbs of starch (corn, potato or tapioca). Bring to a boil.
Once thick pour over the veggies. Add the mashed potato top.
For the top:
Peel and chop 6 potatoes
Boil for about 20 minutes or until the potaotes are soft
Mash the potatoes along with 1 1/2 cups warm almond milk, 2 tbs olive oil and 2 tbs of coconut oil. Salt and pepper to taste
As an option you can serve this with shredded cheese and gravy.
