
Veggie Stir-fry
Who likes stir-fry?!!
Such a great way to get your veggies!!!
1 tbs olive oil
1 tsp sesame oil
1/2 onion cut into chunks
2 portobello mushrooms, sliced
1 orange pepper, thinly sliced
1 yellow pepper, thinly sliced
3 cloves of garlic, minced
1 cup snow peas
1/2 cup cashews (raw or roasted)
Salt and pepper to taste
In a large pan heat the oil over medium heat.
Add the onions and sauté for seven minutes or until soft.
Add the mushrooms and cook for 5 more minutes, stirring frequently.
Add the peppers, peas, cashews and the garlic. Add the sauce (recipe below) and bring to a gentle boil.
Remove from heat and serve over steamed brown rice.
(Note: I added in a little steamed tofu)
For the sauce:
3 tbs rice vinegar
2 tbs hoisin sauce or ketchup
4 tbs soy sauce
4 tbs water
1 tbs sweetener (honey, sugar etc)
1 tbs of starch (corn, arrowroot etc)
1/2 tsp grated ginger
Juice from 1/2 lemon
1/2 tsp chile garlic paste.
Combine all of the ingredients for the sauce in a small bowl and set aside.
